Whipped Honey Butter
Soft butter, raw honey and a pinch of salt, whipped until it turns pale and cloud-light. The hands-on part takes about fifteen minutes once the butter has come to room temperature, and it makes cornbread, biscuits and toast taste like a restaurant made them.
Ingredients
The Base
- 1 cup (2 sticks / 226 g) unsalted butter, softened to about 65°F
Seasoning
- ½ teaspoon fine sea salt
- ½ teaspoon ground cinnamon (optional)
- ½ teaspoon vanilla extract (optional)
From the Hive
- ⅓ cup Go Honey 100% Pure & Raw Honey
Instructions
Soften the Butter
Cut the butter into ½-inch cubes and leave them on the counter for 45 to 60 minutes, until a cube dents easily under your finger but still holds its shape. Do not microwave it — even partly melted butter cannot hold air, and the whipped texture never comes back.
Whip It Plain First
Beat the butter alone with a stand mixer paddle or hand mixer on medium-high for 3 to 4 minutes, scraping the bowl once. It should go from yellow to pale ivory and nearly double in volume. This air is what makes the finished butter spreadable straight from the fridge.
Drizzle In the Honey
Drop the speed to medium-low and pour the honey in a thin stream over about 30 seconds. Added all at once it slides around the bowl and the mixture slips apart instead of emulsifying. Nothing here is heated, so the raw honey keeps its full aroma and flavor.
Salt and Finish
Add the salt and, if you are using them, the cinnamon and vanilla. Return to medium-high and whip 1 to 2 minutes more, until the butter is glossy, uniform in color and holds a soft peak on the paddle.
Taste and Adjust
Try it on a warm piece of bread rather than off the spoon — heat changes how sweet and salty it reads. Beat in another pinch of salt or a teaspoon of honey if it needs it, then whip for 15 seconds to bring it back together.
Store It Properly
Pack into a small airtight jar and refrigerate up to 2 weeks, or roll it in parchment into a log and freeze up to 3 months. Pull it out 30 to 40 minutes before serving and give it a quick stir with a fork to bring the spreadable texture back. And because the honey goes in raw, keep it away from babies under one year old.
