Honey Roasted Carrots
These honey roasted carrots are caramelized to perfection with a buttery honey glaze. An easy side dish that makes vegetables taste like a treat.
Ingredients
Carrots
- 2 lbs carrots, peeled
- 3 tablespoons olive oil
- Salt and pepper to taste
Honey Butter Glaze
- 3 tablespoons Go Honey pure honey
- 2 tablespoons butter, melted
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- ¼ teaspoon cinnamon (optional)
For Serving
- Fresh parsley, chopped
- Flaky sea salt
Instructions
Preheat Oven
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Prep the Carrots
Cut the carrots into even pieces—halve lengthwise if thick, or leave whole if using thin carrots. Even sizing ensures even cooking.
Make the Glaze
In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, and cinnamon if using.
Toss and Arrange
Place carrots on the baking sheet. Drizzle with olive oil and half of the honey butter glaze. Toss to coat evenly. Season with salt and pepper. Spread in a single layer.
Roast
Roast for 20 minutes. Remove from oven, flip the carrots, and drizzle with the remaining glaze. Return to oven and roast for another 10-15 minutes until tender and caramelized.
Serve
Transfer to a serving dish and garnish with fresh parsley and a sprinkle of flaky sea salt.
