Ingredients

Salad

  • 6 cups mixed spring greens
  • 1 cup fresh strawberries, sliced
  • 4 oz goat cheese, crumbled
  • ¼ cup candied pecans
  • ¼ cup thinly sliced red onion
  • 2 tablespoons Go Honey bee pollen

Honey Vinaigrette

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Go Honey pure honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

1

Make the Vinaigrette

In a small jar or bowl, combine the olive oil, apple cider vinegar, honey, and Dijon mustard. Season with salt and pepper. Shake or whisk vigorously until emulsified.

2

Prep the Ingredients

Wash and dry the spring greens thoroughly. Slice the strawberries and red onion. Crumble the goat cheese.

3

Assemble the Salad

Place the mixed greens in a large serving bowl or divide between two plates. Arrange the strawberries, red onion, goat cheese, and candied pecans on top.

4

Dress and Garnish

Drizzle the honey vinaigrette over the salad. Sprinkle bee pollen generously over the top as the finishing touch.

5

Serve Immediately

Toss gently if desired, or serve with the toppings arranged beautifully on top. Best enjoyed right away.

Pro Tip: Add bee pollen just before serving—it adds a lovely floral crunch and is packed with protein and vitamins. For a heartier meal, top with grilled chicken or salmon. The vinaigrette can be made ahead and stored in the fridge for up to a week.
