Strawberry Goat Cheese Salad
This colorful salad features tender greens, fresh strawberries, creamy goat cheese, and candied pecans tossed in a light honey vinaigrette.
Ingredients
Salad
- 6 cups mixed spring greens
- 1 cup fresh strawberries, sliced
- 4 oz goat cheese, crumbled
- ¼ cup candied pecans
- ¼ cup thinly sliced red onion
- 2 tablespoons Go Honey bee pollen
Honey Vinaigrette
- 3 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Go Honey pure honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
Make the Vinaigrette
In a small jar or bowl, combine the olive oil, apple cider vinegar, honey, and Dijon mustard. Season with salt and pepper. Shake or whisk vigorously until emulsified.
Prep the Ingredients
Wash and dry the spring greens thoroughly. Slice the strawberries and red onion. Crumble the goat cheese.
Assemble the Salad
Place the mixed greens in a large serving bowl or divide between two plates. Arrange the strawberries, red onion, goat cheese, and candied pecans on top.
Dress and Garnish
Drizzle the honey vinaigrette over the salad. Sprinkle bee pollen generously over the top as the finishing touch.
