Ingredients

Dry Ingredients

  • 2 cups old-fashioned rolled oats
  • ½ cup unsweetened shredded coconut
  • ¼ cup Go Honey bee pollen
  • ¼ cup mini chocolate chips (optional)
  • ¼ cup dried cranberries or raisins
  • 2 tablespoons chia seeds
  • ½ teaspoon cinnamon
  • Pinch of salt

Wet Ingredients

  • ½ cup natural peanut butter or almond butter
  • ⅓ cup Go Honey pure honey
  • 1 teaspoon vanilla extract

Prep Your Pan

Line an 8x8 inch baking pan with parchment paper, leaving overhang on the sides for easy removal.

Mix Dry Ingredients

In a large bowl, combine the oats, coconut, bee pollen, chocolate chips, dried fruit, chia seeds, cinnamon, and salt. Stir until evenly distributed.

Warm Wet Ingredients

In a small saucepan over low heat, combine the nut butter and honey. Stir until melted and smooth. Remove from heat and stir in vanilla extract.

Combine

Pour the wet mixture over the dry ingredients. Stir until everything is well coated and no dry oats remain. The mixture should be sticky and hold together when pressed.

Press into Pan

Transfer the mixture to the prepared pan. Press down firmly and evenly using a spatula or the bottom of a measuring cup. The more compact, the better they'll hold together.

Chill and Cut

Refrigerate for at least 2 hours (or freeze for 30 minutes) until firm. Lift out using the parchment paper and cut into 12 bars.
